"La tamalada"

An event in some families is the making of tamales.  Everyone gets together and helps.  My job, as a child, was to soak the corn leaves in water, so that they are soft and pliable.  The masa (corn meal "dough") is spread onto the leaf.  The prepared meat is put on top, and then the leaf is folded.  The meat can be pork, chicken, or beef that is cooked with chiles.  The tamal is a perfect little package of flavor.
